Australian Damper Bread- No yeast required
This recipe is great because it does not need time to raise because it doesn't use yeast.
I made mine with rosemary and garlic, but you can change it up with whatever you prefer. I just had garlic and rosemary on hand, but if you don't like strong flavours in your bread, try something else, maybe olives, other herbs, seeds or cheese.
You will need:
500 g self-raising flour (or you can use plain flour and add some baking powder)
1 pinch of salt
1 tbsp olive oil
2-3 branches rosemary (chopped)
250 ml warm water
3-4 garlic cloves cut in quarters
Mix the first 4 ingredients, then make a well in the middle and gradually add the water. Shape it in a round, but flat form, add the garlic then fold the edges to tuck in the garlic. Folt it in until you get a ball. With the rounded handle of a spatula or spoon (i used 2 chopsticks) push it down 4 times. You should get this.
Then it goes in the oven, medium heat, 30 minutes.
