It's Elementary! Wild Garlic Pesto Simple Recipe
You will need:
2 wild garlic handfulls
50g walnuts
50g almonds
100 ml olive oil
50g parmesan
Method:
Put them all in a blender and chop them and mix them until you get the desired consistency.
Serve it on pasta, on meats, on grilled vegetables or as a sauce for everything basically. Just don't plan a romantic date afterwards because it is garlic and it is...wild. Pun intended!
Enjoy!

Calamari and Mushroom Pasta recipe
For 4 servings, you will need:
200g calamari rings
200g calamari tentacles
1 glass of white wine
wild mushrooms (we used about 150 grams of shimeji)
3 garlic cloves, chopped
2 green hot peppers (optionall)
2 tbs chopped parsley
1 tsp dried marjorm
olive oil
lemon
In a pot, we cooked the mushrooms for about 7-8 minutes, then added the gralic, hot pepper and the calamari pieces, cooking them for about 4-5 minutes, on high heat. After that, add the wine, marjoram and reduce it to about a quarter. Now, you can always add tomatoes to this dish, right after the wine and cook for another 10 minutes. I chose not to use tomatoes, so I added the juice of half a lemon (the wine i had was nice, mellow riesling combo, without much acidity, and it fell like the calamari needed a bit more kick), and cooked for another 6 minutes, lid on, while i also cooked my pasta in a pot with salt and olive oil. Mix your chosen pasta (we had home made tagliatelle, big surprise there) with the meat in the pot you cooked the calamari and sprinkle parsley on top (as you can see in the picture, we kinda forgot about that part).
Enjoy!

These days we haven't cooked that much beacause we were mostly out visiting friends and family. This weekend we put together a quick barbecue style family lunch.
We served everything with garlic grilled mushrooms and spring salad.
Hope you enjoyed your weekend!

Fish and Chips with Beer Batter
Lazy day in requires some fast and somehow greasy food. We decided to have some fish and chips, served with pickles and...beer.
The Fish
You can use any white fish. I used a classic beer batter with beer, flour and baking powder. First, season the fillets with salt and pepper, then dust them in some flour, dip them in batter and let the excess drip. Cook them until they turn golden and crisp.
The Chips
Peel your potatoes and slice them into chips. Half-boil them, then drain them and let them dry. Fry the chips in the oil that you have fried the fish. It will give it a nice flavour.
Enjoy!
