The appetizer presented today takes advantage of a classical combination (brie cheese and roasted peppers) in such a great way that you will crave for this crostini from time to time. It is also amazing because you don't need fresh ingredients except the parsley, but you should always have parsley in your house...just saying!
Basically, if you have the cheese and a jar of roasted bell peppers in your fridge you have something to serve your suprise guests.
Cut a baguette in medium slices, brush them with some oil and put them in the oven on a baking tray, for about 3 minutes until it gets slightly golden, then add some brie cubes on it. Let it melt in the oven for like 8 minutes.
Meantime, cut in squares the peppers (for 8 crostinis I used 2 bell peppers). I roasted my peppers myself, but you can use jar/can ones. Also, chop some parsley. Place the peppers in a bowl, add some olive oil, lemon juice or vinegar (add salt only if you roasted the peppers), 2 cloves of garlic crushed and the parsely.
Mix them all very well. When the crostinis are done, take them out on a cooling rack and add some of the peppers mix on each slice.
Garnish with some more parsley if you fancy. So simple it is addictive!
