Behind the title: something simple but filling for those long and exhausting weekday evenings when you come home from work and you just don't want to cook, but you want something cooked and you don't want to spend much time on it because you don't have much time and you don't want to spend a lot of money on ingredients because you are tired and you might mess them up.

Brie and Roasted Peppers Crostini- Appetizers August (3)


The appetizer presented today takes advantage of a classical combination (brie cheese and roasted peppers) in such a great way that you will crave for this crostini from time to time. It is also amazing because you don't need fresh ingredients except the parsley, but you should always have parsley in your house...just saying!

Basically, if you have the cheese and a jar of roasted bell peppers in your fridge you have something to serve your suprise guests.

Ricotta and Tomatoes Puff Pastry Galette


Last night I was getting hungry and I just needed a quick snack. I remembered we have puff pastry in the freezer and I never get to use it.

I was in the mood for something rather salty, but ironically the only cheese we had was ricotta (not so salty).


I just rolled the puff pastry on a clean surface, dusted with some flour and divided the patsry in 6 equal squares. I sprinkled some salt on the dough, made some tiny holes with a fork, so that ot won't puff to much while baking. Then, I just added some ricotta cheese and thin slices of tomatoes in the middle leaving the edges clear. Brush the edges with a beaten egg and seal them so that the juices don't spill in the oven. Garnish it with some basil leaves and in the oven it goes.


After just 20-25 min you have a great snack and I have to say it is actually quite filling. I liked it best warm to room temperature, but cold would also do if you want to make smaller galettes and pack it for work/school.

It's Elementary! Boiled Corn on The Cob


The smell of boiling corn on the cob is one of my favourite summer smells, it's just something so comforting and exciting about the scent.

I don't want to get all food-blogery with you and explain to you how to do it because it is not rocket science and I did not invent a special method.

I just remove the husk and the silk, wash it, then in a pot put half of the husks, then the cobs, then water, then husks again and cover it. That ensures plenty of flavour. I never salt the water, I just salt the corn after it is boiled.

I don't want to get into timing, because it depends so much on how young is the corn, how many cobs you put in the pot and how you like it. I boiled it for 20 minutes.

Final step: remove from pot + salt the corn + stuff your face with it like there is no other way!

Tabbouleh Salad/ Tabouleh/ Tabouli


For this delicious and full of flavour salad we used:

100 g bulgur (we had medium)
3 tomatoes
2 bunches flat leaf parsley
1 bunch mint
1 onion
salt and pepper
olive oil 
lemon juice


Remove the parsley leaves from the stems and chop them finely. The same with the mint. Mix them.


Chop the onion (you can use the regular, yellow kind), sprinkle some salt on it and rub it. 

Also dice the tomatoes and add the prepared, washed and drained  bulgur in the same bowl. Mix the bulgur and the tomatoes, so that the bulgur can take on  the juice.

In a salad bowl mix the parsley and the mint with the onion and tomatoes. Add salt and pepper if necessary and drizzle olive oil and lemon juice on top.

Fast Breakfast- Avocado Toast


This is not a recipe post, obviously avocado toast is the easiest thing to do, but it is so delicious and addictive that even if it needed more effort and time it would be worth it.

Lately, it has been the breakfast I think about when I wake up. What can I say? Avocado toast is the new bread and jam. Just toast some slices of your favourite bread.  Cut the avocado in half, remove the pit and with a spoon betwen the skin and the pulp remove the skin. You can smash it and put it on the toast like a spread, you can cut it in slices or chunks. As you can see we chose both, chunky slices. :)

Drizzle some olive oil on top, some sea salt and some pepper optional. Depending on your taste , add some fresh lemon juice.

Smoked Salmon Snack/ Appetizers

Down below is our go-to snack or appetizers when someone shows up at our place. It's delicious and, like all my favourite get together/ party bites, looks like you have put more effort into it than you really did.

Just some slices that come together:
baguette slice + smoked salmon + boiled egg slice + tomato slice + capers or lemon + dill.
